Carrot cake is my favourite Friday breakfast and even more at Seng Huat Carrot Cake stall situated at my Yuhua hawker food centre.
Unlike Mondays, I tend to eat heavy on Fridays as they are the last days of working weeks
I also see Friday as black dark day of the night in contrast to Monday blue, black and white.
The carrot cake comes in 2 simple varieties with or without dark soy sauce.
If you are health conscious or allegic to soy sauce, you may go for the plain one but with more chilli.
Whichever case, it is served with egg and heated under fire, it makes a fantastic breakfast dish!
